Enjoy a tasty, healthy supper of succulent strips of chicken breast, stir-fried in Pura Liquid Coconut Oil with red and yellow peppers, carrots, spring onions and instant noodles, flavoured with soy sauce and orange juice, sprinkled with toasted sesame seeds.
Soak the egg noodles in boiling water for 6-8 minutes, or according to pack instructions.
Mix together the orange juice, cornflour, soy sauce and sweet chilli sauce. Set aside.
Heat the Pura Liquid Coconut Oil in a wok or large frying pan and stir-fry the chicken for 2-3 minutes over a high heat.
Add the peppers, carrot, courgette and spring onions and stir-fry for another 6-7 minutes. Stir the orange juice mixture and add to the chicken and vegetables. Drain the noodles and stir them in gently. Season to taste.
Serve the stir-fry, sprinkled with toasted sesame seeds.
