Pura Chicken, Pepper and Noodle Stir-Fry

Enjoy a tasty, healthy supper of succulent strips of chicken breast, stir-fried in Pura Liquid Coconut Oil with red and yellow peppers, carrots, spring onions and instant noodles, flavoured with soy sauce and orange juice, sprinkled with toasted sesame seeds.

  • 2 nests egg noodles
  • Juice of 1 orange
  • 2tsp cornflour
  • 2tbsp soy sauce
  • 2tbsp sweet chilli sauce
  • 2tbsp Pura Liquid Coconut Oil
  • 350g skinless chicken breast, thinly sliced
  • 1 red pepper, deseeded and sliced into strips
  • 1 yellow pepper, deseeded and sliced into strips
  • 1 large carrot, cut into fine strips
  • 1 courgette, sliced
  • 1 bunch spring onions, finely sliced
  • 1tbsp sesame seeds, toasted
  • Salt and freshly ground black pepper


  1. Soak the egg noodles in boiling water for 6-8 minutes, or according to pack instructions.
  2. Mix together the orange juice, cornflour, soy sauce and sweet chilli sauce. Set aside.
  3. Heat the Pura Liquid Coconut Oil in a wok or large frying pan and stir-fry the chicken for 2-3 minutes over a high heat.
  4. Add the peppers, carrot, courgette and spring onions and stir-fry for another 6-7 minutes. Stir the orange juice mixture and add to the chicken and vegetables. Drain the noodles and stir them in gently. Season to taste.
  5. Serve the stir-fry, sprinkled with toasted sesame seeds.
