Pura Peach, Raspberry and Banana Muffins

Great for a mid-morning snack, these muffins are made with Pura Liquid Coconut Oil and mashed banana with chopped fresh peach and raspberries. They’re perfect for packed lunches and picnics too!

Ingredients

  • 275g plain flour
  • Pinch of salt
  • 1tsp bicarbonate of soda
  • 2tsp baking powder
  • 125g caster sugar
  • 1 large egg, beaten
  • 1tsp vanilla extract
  • 150ml milk
  • 125ml Pura Liquid Coconut Oil
  • 2 medium bananas, mashed
  • 75g raspberries
  • 1 fresh peach, pitted and chopped

Method

  1. Preheat the oven to 190°C, fan Oven 170°C, Gas Mark 5. Put 12 paper or silicone muffin cases into a muffin tin.
  2. Sift the flour, salt, bicarbonate of soda and baking powder into a large bowl and stir in the sugar.
  3. In a separate bowl, beat together the egg, vanilla extract, milk and Pura Liquid Coconut Oil. Pour this mixture into the dry ingredients and add the bananas, raspberries and chopped peach. Stir until just combined - do not beat.
  4. Share the mixture between the muffin cases and bake for 22-25 minutes until risen and golden. Cool on a wire rack.
