Preheat the oven to 190°C, fan Oven 170°C, Gas Mark 5. Put 12 paper or silicone muffin cases into a muffin tin.
Sift the flour, salt, bicarbonate of soda and baking powder into a large bowl and stir in the sugar.
In a separate bowl, beat together the egg, vanilla extract, milk and Pura Liquid Coconut Oil. Pour this mixture into the dry ingredients and add the bananas, raspberries and chopped peach. Stir until just combined - do not beat.
Share the mixture between the muffin cases and bake for 22-25 minutes until risen and golden. Cool on a wire rack.
