- Baked Salmon and Broccoli Rice
You’ve heard of courgetti spaghetti – but how about broccoli rice? It’s the perfect lower carb sidekick for a lemony baked salmon fillet.
Here’s how: Preheat the oven to 180°C fan. Drizzle the salmon with Pura liquid coconut oil and a squeeze of lemon, and bake for 20 minutes. Meanwhile, whizz up some broccoli in a food processor until it resembles a crumbly cous cous. Five minutes before the salmon is ready, steam the broccoli, and voilà!
- Beetroot, Orange and Feta Salad with Spiced Chickpeas and Almonds
We’re pretty pleased with this one – a revved-up rainbow of colours, textures and flavours that’s good to go in bang on 20 minutes!

Fancy Thai food tonight? Instead of your usual green chicken curry, why not try these little lettuce parcels of sweet and salty pork?
Stir fry onion and garlic in Pura liquid coconut oil, then add pork mince and sizzle for 10 minutes. Add fish sauce, soy sauce, lime juice and chopped chillies to taste, and simmer a minute longer. Fill each lettuce leaf with a dollop of the spicy mixture, and wrap carefully. Service with a sprinkling of fresh mint and coriander.

- Avocado Chocolate Mousse
OK fine, this one isn’t technically a proper dinner, but we couldn’t leave you without a sweet treat to finish!
To your blender, add: one ripe avocado, one chopped frozen banana, and a couple of tablespoons each of cocoa powder, cinnamon and honey. Feeling extra spicy? Add a dash of chilli powder. Blend until creamy and adjust flavours to suit yourself. Spoon into teeny shot glasses and refrigerate (remember to save one for us!).
